Abstract

The article aims to analyze the sustainability of Food Self-Sufficiency from bean production in the province of Guantánamo. The method used has three parts. In the first, the productive efficiency of local bean production is characterized as a criterion of sustainability of food self-sufficiency in the selected province. In the second, its sustainability (soil quality) and, finally, the problems that limit it are identified. The analysis of the sustainability of food self-sufficiency through productive efficiency, and the sustainability of soils allowed: to argue the importance of studying this process from the economic and environmental dimensions of sustainable development, to identify the problems that limit such an important and complex process and thus contribute to the improvement of the local food system and to the country's Food Sovereignty and Nutrition Education Plan.
